Every spring, nettles are one of the first wild greens to emerge, bringing with them a generous dose of nourishment after a long winter. Rich in iron, calcium, magnesium, silica, vitamin A & C… They are one of nature's most nutritious plants & help the body to replenish minerals, support healthy blood, skin, hair, bones, & restore overall vitality after the long winter months.
This simple soup is one of my favorite ways to enjoy them. It's comforting, vibrant, & tastes like spring in a bowl.
Ingredients
4 cups fresh nettle tops & leaves
2 potatoes, chopped
3 celery stalks, chopped
1 onion, diced
5 garlic cloves, diced
4 cups broth
2 tbsp butter, ghee, or oil
Salt, pepper to taste
Juice of ½ lemon
Optional: herbs like parsley, dill, chives, edible flowers for garnish…
Directions
Heat butter or oil in a large pot over medium heat.
Add onion, garlic, celery, cooking till soft & caramelized.
Pour in the broth & add chopped potatoes. Simmer for 15 minutes, till potatoes are soft.
Stir in the nettles & cook for another 5 minutes.
Season with salt, pepper, & lemon juice.
Allow soup to cool, then blend till smooth. Garnish with fresh herbs if desired.
Simple, wholesome, & nourishing. Spring really can be served in a bowl ❀
